Vegan no-bake date and peanut butter oat cookies

Ingredients
6oz (150g) porridge oats
4oz (100g) dates (chopped)
2oz (50g) vegan margarine
5fl.oz (150ml) apple juice
1 big spoon of peanut butter
1 big spoon golden, maple or date syrup

Method
In a small pan bring the dates and apple juice to the boil and simmer for about 5 minutes. As the mixture thickens, mash the dates with fork and then place the mixture in a large bowl.

Put the margarine, pb, and syrup in the pan and melt together then pour onto the date mixture.

Begin to stir in the porridge oats slowly. You might not need them all so do it a little at a time. When the mixture is thick and sticky shape it into balls and flatten onto a greased baking tray.

Put in the fridge overnight and voila! Snacks for the next morning :)
