Life in the world of the Suburban Yogini isn’t all spangles and stars and sweetness and light. Some days I feel below par. Way below par. Occassionally I post about my propensity towards melancholia, but mostly I only like to post the good stufff – after all who wants to read about other people’s gripes?!
But this is a blog predominantly about balance, so let it just be known that some days are just off and yesterday was one of those days. Yesterday my yoga practice consisted of lying down, feeling sorry for myself and falling asleep. Yesterday nothing fell into place. So really, there was only one thing for it – one of my favourite comfort food recipes.
Chili Non Carne

Ingredients (for 2)
150g Veggie “Mince” (I use Quorn mince but watch out because it isn’t vegan. Quorn products use free range egg whites to bind it so if you’re really strict try dried soya mince or textured vegetable protein)
1 onion chopped
1 clove garlic chopped
1 red chili chopped
1 can chopped tomatoes
1 can kidney beans (drained)
Method
Fry the onion, chopped chili, garlic and mince in a little olive oil over a low heat at the bottom of a large saucepan until the onion starts to get tender and the mince browns.
Add the can of tomatoes and the beans and turn the heat down to low. Add the chili powder (to your taste!) and then allow the pot to simmer for about 15 minutes or until the sauce starts to thicken (if it gets too thick just add a little water or stock)
Serve with brown rice, tortilla chips and sour cream (vegan sour cream if you like). It’s so comforting.
