humpday recipe: gazpacho

So barbequeue weather is back again.  It’s hot, it’s humid and all you want something cold and vegetably to accompany all that grilled meat that men insist on cooking when the weather is hot! ;)

Go for gazpacho!  If you haven’t had it before it’s a kind of cold vegetable soup.  That makes it sound gross though.  It isn’t!!

Simple simple to make.

To serve four chop up 1kg of ripe tomatoes, 1 red and one green pepper, half a cucumber, a clove of garlic (I prefer it without garlic but I believe that is unusual) and put it in your blender along with a handful of whatever herbs you like (I used fresh mint and basil), 150ml of olive oil and 2 tablespoons of balsamic vinegar.

Now before you blend there is a decision to make.  The bread debate.  It goes thus.  Some parts of Spain think you should put bread in the blender too.  Other parts don’t.  I’m in the don’t camp, but give it a whirl before you make your decision…..

…. soak a couple of slice of slightly stale bread in water for twenty minutes and add to the blender mix.

Declicious served with potato salad, hard boiled egg and a glass of ice cold bubbly!
