Food experiments are a lot of fun, and very educational. The teacher training program I'm in has us on a different diet each week. So far we've eliminated dairy, gluten, refined sugars, corn, and 'un-whole" foods. I've learned a heck of a lot about the way my body uses these foods and how to best incorporate them (or not) into my diet.

Great article!
