humpday recipe: food in a bowl

Readers, it feels that we never got very far with the barbecue recipes before suddenly there’s a taste of autumn in the air. So in celebration/commiseration I give you food in a bowl.

Food in a bowl is a stalwart in the Yogini household during the autumn/winter months. You can put pretty much anything in it, and make it in huge quantities and freeze it for nights when you don’t have time to cook. But what is it? Is a soup? Is it a stew? Who cares! Like life, it’s what you make it.

So here is a light version for these late summer nights.

Gather your ingredients….

…chop up an onion and a tomato and fry gently in olive oil.

Add a tin of tomatoes, a drained tin of chickpeas, any herbs and spices you like (I used fresh rosemary and thyme and a pinch of chilli powder), and about 200ml of vegetable stock. Allow to simmer for about 20 minutes until it starts to thicken and then add about half a shredded cabbage. Cook for another 5 minutes and serve with some grated cheese, parmesan or nutritional yeast sprinkled on top depending on your taste/dietary requirements…. eat with chunky bread or crackers. Yum!

  3. I love eating out of a bowl, I am not sure why. I call what you have created a Stoup.
    A combination of soup and stew.

    I know, its a genius portmateaux!
