vegan banana and almond bread

Wednesdays can be tough right?  Even when you think about all that Hump Day happiness there is still the other half of the week to go.  So I thought we’d cheer things up with cake!

Sometimes it must seem like all I do is bake cakes and cookies.  But then sometimes it must seem that I’m chipper all the time and we all know if that were true it would be extremely annoying! ;)   I cook lots of healthy savoury stuff too, but it’s not as much fun to write about y’know!?

So how do you make this yummy looking banana bread?

(Himself may have built me a lightbox but he hasn’t shown me how to use it yet so all my photos are still brown from my stupid brown kitchen)

Peel and mash 1lb (450g) of very ripe bananas (I’m lazy, I do this in the food processor) and mix them in a bowl along with a tablespoon of golden or maple syrup, 4floz (125ml) sunflower or vegetable oil, 2oz (50g) ground almonds and 2oz (50g) of raisins/sultanas/chopped dates/mixed dried fruit.

Sieve 8oz (225g) self raising flour into the mix and stir it all up.

Put the mix in a greased and lined loaf tin and bake at 180*c/350*F/Gas Mark 4 for one hour.  When it’s cooked let it cool on a wire rack.

Nom nom nom.

Once cool, slice it up and spread the slices with a little bit of butter (well vegan margarine) if you’re feeling decadent.   I had two slices for breakfast with a Green Monster!

And because I had cake for breakfast, I had breakfast for supper last night.  True story :)

easter weekend

Hey friends!  Did you miss me?  It’s been a six day weekend.  And it’s been fantastic!  I’ve enjoyed doing not very much at all but here’s a photo rundown.

On Thursday Himself got new ink.  He was incredibly brave and sat in the chair for over 6 hours!  How awesome is the result (on his left upper arm)?

Meanwhile, I went for lunch with friends at The Old Bull in Barton Mills near Newmarket.  I totally wish I hadn’t forgotten my camera as this pub has just been refurbished and looks amazing.  The menu is also fantastic.  I had vegan mushroom burger in ciabatta with potato wedges and slaw.  Delicious!

On Good Friday I had hot cross buns with PB&J (what do you mean that’s disgusting?)

I baked vegan carrot cupcakes (recipe here) and Himself made chocolate nests.

On Saturday we finally had some good weather and cycled down to the Backs to enjoy the sunshine.

The Backs are exactly that, the backs of the colleges in Cambridge.

Kings College Chapel (probably our most famous landmark).

Then we came home and watched Julie and Julia, which I really enjoyed even though it was different from the book.  In the book Julie wants to be an actress, not a writer and this to me makes it even more marvellous when her dreams comes true through writing rather than acting.  But at the end of the day, like I said when I read the book, it’s about a blogger who gets a book and movie deal.  What’s not to like!  I did ask Himself about the scene where Julie and Eric have the huge row about how their entire lives end up on the blog.  I asked him if he felt like that.  He says he has got used to it! :)

Easter Sunday was boiled eggs for breakfast of  course!

And an Easter Egg hunt and dinner at Ma and Pa Yogini’s.

Neither me nor my brother have kids, but that doesn’t stop us hunting Easter eggs.  Pa Yogini created some truly incomprehensible clues this year!

the first day of spring

…and what a beauty it has been!  But more on that in a second.

And so to the weekend.  I started with a Green Monster!

In the mix: 200ml soy milk, half a banana, two handfuls of spinach, one kiwi fruit and a spoonful of peanut butter.

Yesterday was wet and rainy.  Himself was delighted because it meant I didn’t make him mow the lawn!  We stayed in and were entertained by cats instead.

(I have no idea what’s going on with his tail and tongue here!)

Today though, oh today was beautiful, and warm and smelled like summer and my garden came alive!
